Apple Butter Recipe No Sugar

This apple butter recipe is a major update from the previous one. About 6 years ago, I posted a recipe with a cup of sugar.

A friend of mine recently had a heart incident and is avoiding all sugar. She told me that she bought apple butter with no added sugar and I said, “Wait a minute! You can do it.”

I took a look at my old recipe and realized that years ago, I wasn’t in the NO ADDED SUGAR band as much as I am today. Check out my two posts: No Sugar Challenge and No Sugar Challenge:Part II. I used sugar in the recipe and didn’t worry. But do you really need all that sugar? I was excited to try it.

These are the ingredients you need. I chose a relatively sweet apple (Gala) because I didn’t think it would work with a Granny Smith. But I must say that I did not test that assumption.

I thought I could always add sugar if it was too sour, but it was pretty good and I didn’t notice the lack of sugar! What about that?

I make apple butter in my slow cooker and the best part? You don’t have to peel the apples.. Simply remove them, cut them into pieces, and throw them away.

After 12 hours at low temperature, you have the perfect apple porridge.

At this stage, I used my blender (or immersion blender) to puree the apples. Then, I take the lid off my slow cooker and cook it until it’s quite thick.

Now what? You can put it in a jar in your refrigerator and eat it or freeze it in smaller containers. You can also make it, which is a little more intense, but means you can give it to friends and family (and keep it for a year).

These are the steps necessary for canning:

  1. wash the jars and lids (use whatever size you want)
  2. boil jars for 15 minutes in a large pot
  3. remove the jar, throw away the hot water
  4. fill with hot apple butter leaving about 1/2 inch at the top of the jar
  5. put lid
  6. boil the full jar for 5 minutes
  7. wait 12 hours and test sealing (repeat sealing if it didn’t work)

I put this apple butter on my toast, on my yogurt, and on my turkey sandwiches. It tastes like autumn.

Ingredients

5 pounds apples, unpeeled, cored and sliced
1 cup of water
1 teaspoon ground cinnamon
1 teaspoon ground allspice
pinch of salt

Instructions

Coat a 6-quart slow cooker with nonstick cooking spray. Add the apples, water, cinnamon, allspice and salt. Cover and simmer for 12 hours (or overnight).

Blend the cooked apples with an immersion blender, food processor, or regular blender and pour the liquid back into the slow cooker.

Remove lid and cook for an additional 2 to 4 hours on low to reach desired thickness.

Store in covered containers in the refrigerator for up to 2 months, freeze for up to 3 months, or can apple butter using the procedure above. Use 4 to 8 ounce jars to can 5 pounds of cooked apples.
