The best gluten-free brownies

  • 2/3 cup brown rice flour mix (see below) OR 1/6 tapioca flour + 1/6 potato starch + 1/3 brown rice flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon xanthan gum
  • 2 ounces. sugar free chocolate
  • 4 oz semisweet chocolate
  • 1/2 cup unsalted butter (or vegan butter)
  • 1 1/4 cup granulated sugar
  • 2 teaspoon pure vanilla extract
  • 3 large eggs (flax eggs can also be used)
  • 3/4 cup chopped toasted walnuts (optional)

  1. Preheat oven to 325. Place rack in bottom middle of oven.
  2. Line an 8-inch square baking pan with aluminum foil and grease with cooking spray.
  3. Combine flour, salt, baking powder, and xanthan gum in a small bowl and set aside.
  4. Melt the chocolate and butter in a double boiler (or melt in the microwave for about 45 seconds, stirring every 15 seconds).
  5. Beat in the sugar, vanilla and eggs, one at a time. Continue whisking until the mixture is smooth and glossy.
  6. Add the flour mixture and beat until incorporated.
  7. Add walnuts (if you want to add them).
  8. Pour the batter into the prepared pan and bake for 45 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  9. Let cool in the pan on a rack for 5 minutes.
  10. Remove the brownies from the pan by lifting the aluminum foil and let them cool completely on a rack.
  11. Cut into squares or triangles.

The quality of the chocolate makes all the difference, so I chose these adorable Tcho baking bugs. They are almost too cute to melt!

After melting the chocolate in the microwave (for about 45 seconds, stirring every 15 seconds), I added the sugar, butter, egg, and vanilla until well combined and glossy.

Then I added the flour mixture. I like to have a gluten-free flour mix on hand (recipe below), but you can also improvise on the spot. I filled 1/3 measuring cup halfway with potato starch and halfway with tapioca flour, then filled another 1/3 measuring cup with brown rice flour.

There’s a trick you can try that will save you cleanup and help you cut brownies better: Line the baking dish with aluminum foil and spray with cooking spray. When they are ready and have cooled a little, you take it all out (aluminum foil and all), let it cool, and then cut it.

Either way, you’ll have delicious, fluffy gluten-free brownies.

These gluten-free brownies are especially delicious with a scoop of coconut milk ice cream on top. Your family may go so crazy over this that there is very little left to enjoy the next day.
