Ingredients

RANCHERA POTATO SKIN WITH CHEESE

  • 4 medium russet potatoes (about 190 g each)
  • 1 tablespoon butter, melted
  • ¾ cup cheddar cheese, grated
  • 4 strips bacon, crumbled
  • 1 bag Quest Ranch Tortilla Chipscrushed
  • 4 sour cream
  • 1 jalapeno, sliced
  • 1 tablespoon chives, chopped

Method

  1. Preheat the oven to 400ºF and prepare a baking sheet with parchment paper.
  2. Pierce the potatoes with a fork, place on the baking sheet, and bake for 1 hour (or microwave for 10 minutes, turning halfway through).
  3. Let cool for 20 minutes. Cut the potatoes in half lengthwise and remove the center, leaving ¼ of the potato.
  4. Each potato half should weigh about 65 g. Brush with melted butter and sprinkle with salt and pepper.
  5. Turn the oven on to broil and bake the potato skins again for 3 minutes, flip them over and bake for 3 more minutes.
  6. Meanwhile, in a bowl, mix together the cheese, bacon, and crushed potato chips.
  7. Remove the skin of the potatoes from the oven and fill with the cheese filling.
  8. Return to oven for 3-5 minutes. Finish with sour cream, jalapeno slices, and chives. Attend.
