These gluten-free peanut butter cookies can be made with ingredients from your pantry. There is nothing special here!

I literally have a ton of peanut butter. Peanut butter is one of those foods my family can’t do without and it’s incredibly nutritious.

Is peanut butter a good option? Yeah!!

Over the years, numerous studies have shown that people who regularly include nuts or peanut butter in their diet are less likely to develop heart disease or type 2 diabetes than those who rarely eat nuts.

Now that I’ve convinced you that you love peanut butter, what about these cookies? I added sugar but these They are cookies.

I also made Peanut Butter Chocolate Chip Oatmeal Bars for those who want to add a little chocolate to their peanut butter (me!).

You can also add chocolate chips to these cookies.

To ensure they are gluten-free, you should purchase gluten-free oats. You’ll also want to buy a peanut butter that is natural (just ground peanuts with no added sugar or oil). Check out What is the healthiest peanut butter? if you need any input.

This recipe is very easy. One bowl, no mixer, and that’s it. Anyone, even those who feel like they don’t know how to bake, will be able to make them.

They’re not decadent cookies, but you can pack them as a quick snack instead of a packaged bar. These will also freeze well.

Do you want to make them more interesting? Add coconut, chopped peanuts, raisins, cinnamon, a pinch of flaked salt on top…..

I like them simple because I don’t want to eat too many in one sitting. Sometimes being bored is a good thing.
