Roasted Eggplant Salad

Roasted eggplant salad is for summer. Eggplant is so fresh right now!

You need to get an eggplant and roast it. This recipe is easy and I found that the newer eggplants on the market don’t need salt to remove the bitterness. Yes, these eggplants are naturally sweet.

I haven’t talked about eggplant as much as I should. My husband and daughter are a bit allergic to it, so I don’t cook it often, but I love it! Check out how to grill vegetables and the eggplant dip recipe for other eggplant ideas.

Eggplants are high in water content and have almost no cholesterol or fat, and are a great source of fiber. They are also a good source of vitamin C, vitamin K, magnesium, phosphorus, copper, dietary fiber, folate, potassium, and manganese.

Roasting eggplant at a high temperature with a little balsamic vinegar gives it a rather sweet flavor. I fell head over heels in love with this roasted eggplant and hid it from my husband.

The dish above is before it is roasted. After it is finished cooking, it becomes smaller and sweeter.

It’s a bit of a bummer to use a high-temperature oven in the summer, but you can then refrigerate the result for a fresh vegetable snack.

It can be eaten alone, stuffed into a pita bread, mixed with cherry tomatoes and green salad, or spread over rice.

It’s a delicious side dish for any barbecue and I find I eat it straight from the fridge if I have time to cook it.

Use the food processor to chop the garlic and onion to save time.

How do you cook eggplant? Are you worried about salt?
