Chocolate Chip Zucchini Bread Recipe

Got zucchini? I have a chocolate chip zucchini bread recipe for you.

This uses up 3 medium zucchini! I know people have way too many zucchini in August and this bread will freeze well.

Adding zucchini to baked goods makes them juicier without the need for butter or oil. Zucchini has magical properties! But you still need to use a little oil and sugar to make them taste good and not gummy.

I also added my favorite chocolate chips.

To grate zucchini in a snap, I use my Cuisinart with the grater wheel.

If I haven’t convinced you to buy a Cuisinart yet, I probably can’t. I always use one when I cook because it saves me time and I can put it in the dishwasher. Chop, grate, puree… everyone who cooks at home should have one!

This recipe calls for two 8.5 x 4.5 x 2.5cm loaf pans. If you don’t have them, use what you have. The variation in size and materials is AMAZING. Check out this guide Bread pan guide to help you navigate the madness.

Fill the mold to approximately 2/3 of its capacity and monitor the cooking time.

Chocolate Chip Zucchini Bread Recipe

Makes 2 loaves (8 1/2 x 4 1/2 pans)

Ingredients

3/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1/2 cup vegetable oil
3 cups all-purpose flour (or 2 cups all-purpose flour and 1 cup whole-wheat flour)
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
3 cups grated fresh zucchini (about 3 zucchini)
3/4 cup semi-sweet chocolate chips

Instructions

Heat oven to 350°F. Spray two 8 1/2 x 4 1/2-inch loaf pans with nonstick spray. Mix sugar, eggs, vanilla extract, and oil in a large bowl until combined. Add flour, baking soda, cinnamon, and salt and mix until a firm ball of dough forms. This dough will be fairly dry. Mix in zucchini and chocolate chips. Fill loaf pans 2/3 full and bake for 30 to 40 minutes until toothpick inserted in center comes out clean.

This bread can be frozen.
