Ingredients

LEMON AND BLUEBERRY CRISP

  • Crunchy:
  • 2 Lemon Cake Quest Bars
  • 2 tablespoons of calorie-free sweetener
  • Pinch of salt
  • 3 tablespoons butter, at room temperature
  • Stuffed:
  • 4 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 1 tablespoon of calorie-free sweetener
  • 1 tablespoon cornstarch

Method

  1. Preheat oven to 350 F and line a baking sheet with parchment paper.
  2. Break the Quest bar into small pieces and place on the baking sheet. Bake for 7-8 minutes until golden. Allow to cool completely.
  3. Once cooled, add the bar pieces to a blender and blend until fine crumbs form. Then, transfer them to a bowl with the no-calorie sweetener and salt and mix. Add the butter and use a fork to mix. Set aside.
  4. In a bowl, mix the filling ingredients and then divide them between 6 moulds. Cover with the crunchy topping and bake for 15 minutes.
  5. Serve warm with ice cream if desired.
